Foget about your kababs and khoreshs. Take away your lobsters and steaks. This is my best dish ever, one which I would willingly eat till I burst; a food which comforts me on winter nights and lightens summer evenings, cheap, prepared in 15 minutes-
2- leftover cooked chicken (optional)
3- Spices incl. curry powder
4- Grated cheese (any kind- optional)
5- Whoops – I was almost forgetting the noodles.
Fry onion and spices. Add left over cooked chicken which you have shredded with your fingers. Push around the frying pan until the chicken is well-coated with spices. Don’t let the spices burn or turn bitter. Careful with the salt if you’re using the package spice and flavouring which comes with the noodle. Also if you’re using chicken stock.
Add some water to the onion-chicken mixture. Or some chicken stock, if you have some and like the stronger chicken-y flavour. Bring to boil.
Add the noodles. Let cook until water almost – but not quite- evaporates. You want some moisture in there, but on the other hand, you’re not making soup.
Sprinkle with the cheese. Enjoy.
Don’t use chicken. Use up any kinds of left over vegetables you have lying round the fridge: cabbages, cauliflowers, julienned carrots, more onions (you can’t go wrong with onions), peppers, spinach. Etc. Sautee with the onions in step 1.
I don’t know what it is about this food, but I just love it more than just about anything I can think of right now.
